Banana and chocolate muffins

INGREDIENTS
- 250 g bananas (weighed without peel)
- 250 g of flour, your favorite (I used 125 g of spelt and 125 g of wholemeal; 00 is fine)
- 2 eggs
- 125 g of sugar (you can also use brown sugar if you like)
- 100 ml of whole milk (you can substitute it)
- 125 g butter
- a teaspoon of vanilla extract
- 10 g of baking powder
- 125 g dark chocolate
PROCEDURE
- If you use a stand mixer, equip it with a whisk (you can use an electric whisk).
- In a bowl, beat the butter cut into cubes with the sugar until the mixture is light and frothy.
- Continuing to whisk, add: the eggs (one at a time), the banana pulp previously mashed with a fork, the milk, the vanilla, the sifted flour and yeast.
- Cut the chocolate into pieces and add it to the mixture, mixing with a spatula.
- Divide the mixture into the muffin cups (fill up to 2/3).
- If you want to have some chocolate on the surface, place a piece before baking.
- Cook in a preheated oven at 180° for about 25 minutes (do the toothpick test)
