Banana and chocolate muffins

Muffin banana e cioccolato

INGREDIENTS

  • 250 g bananas (weighed without peel)
  • 250 g of flour, your favorite (I used 125 g of spelt and 125 g of wholemeal; 00 is fine)
  • 2 eggs
  • 125 g of sugar (you can also use brown sugar if you like)
  • 100 ml of whole milk (you can substitute it)
  • 125 g butter
  • a teaspoon of vanilla extract
  • 10 g of baking powder
  • 125 g dark chocolate

PROCEDURE

  • If you use a stand mixer, equip it with a whisk (you can use an electric whisk).
  • In a bowl, beat the butter cut into cubes with the sugar until the mixture is light and frothy.
  • Continuing to whisk, add: the eggs (one at a time), the banana pulp previously mashed with a fork, the milk, the vanilla, the sifted flour and yeast.
  • Cut the chocolate into pieces and add it to the mixture, mixing with a spatula.
  • Divide the mixture into the muffin cups (fill up to 2/3).
  • If you want to have some chocolate on the surface, place a piece before baking.
  • Cook in a preheated oven at 180° for about 25 minutes (do the toothpick test)
