Pan-fried pizzas

Pizzette in padella

INGREDIENTS

  • 220 g of flour 0
  • 130 ml of warm water (maybe you don't need all of it, it depends on the flour)
  • 8 g of instant yeast for savory dishes
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon salt (about 4 g)

INGREDIENTS (for filling)

  • peeled tomatoes (or puree)
  • Mozzarella
  • extra virgin olive oil
  • basil
  • salt
  • anchovies, olives, oregano etc whatever you prefer

PROCEDURE

  • Place the flour, yeast and a little water in a bowl and start mixing with a spoon.
  • Add the oil and salt and more water. Knead with your hands and transfer the mixture onto a pastry board.
  • You may not need all of the water.. so add it gradually based on the absorbency of the flour.
  • Knead for a short time just to obtain a smooth and homogeneous mixture.
  • Roll out the dough with a rolling pin and cut out disks using a small pastry cutter or a glass.
  • Blend the peeled tomatoes with oil, salt and basil.
  • Heat the pan (use a flame spreader if you have one, to distribute the heat better) over low heat and place the dough discs in it.
  • Cover with a lid and cook for about 7 minutes. You can turn them halfway through if you want the pizzas to be golden brown (I didn't do it, I don't mind the light edge, but many people find it more appetizing to have it colored).
  • Add the tomato on the surface and cover again with a lid. After about 2/3 minutes add the mozzarella and the other chosen ingredients (for me green and black olives, anchovies and oregano). Cover and wait for the mozzarella to melt.
