Light Yogurt Cake

Torta allo yogurt leggera

INGREDIENTS

  • 280 g of 00 flour (or white spelt)
  • 60 g of potato starch
  • 1 sachet of yeast
  • 340 g of natural yogurt
  • 140 g of sugar (this is the minimum, if you like it sweet you need to increase it)
  • 120 ml of rice oil (it is the most neutral, or use your favorite, an organic corn oil etc.)
  • a teaspoon of vanilla extract
  • icing sugar for decoration

PROCEDURE

  • In a bowl (of the stand mixer if you are using one) add the yogurt, sugar, vanilla and oil and mix with a whisk.
  • Sift the flour, baking powder and starch and fold them into the mixture with a spatula or a whisk at low speed.
  • Line a baking pan (20/22 cm if larger it will just be lower) with baking paper or butter and flour.
  • Pour the mixture and cook in a static oven preheated to 180° for approximately 35/40 minutes.
  • Once cooled you can sprinkle with icing sugar (you can use a stencil for decoration).
