Apple and almond cake

Torta di mele e mandorle

INGREDIENTS (18 cm mould)

  • 3 apples
  • 150 g almond flour
  • 80 g of butter at room temperature (the original Sale & Pepe recipe called for 100 g)
  • 120 g of sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 30 g flaked almonds
  • cinnamon powder
  • a teaspoon of vanilla extract
  • a pinch of salt

PROCEDURE

  • Soak the almond flakes in cold water for 15 minutes.
  • Beat the butter and sugar until creamy.
  • Add one egg at a time alternating with the almond flour.
  • Add vanilla, salt and yeast and mix.
  • Line the pan with baking paper.
  • Peel the apples and slice them thinly after removing the core.
  • Pour a layer of mixture into the cake pan and place a layer of apples on top, sprinkle with cinnamon. Continue until the ingredients are finished.
  • Dry the almond flakes and arrange them on the surface in concentric circles.
  • Bake for about 50 minutes at 180° (do the toothpick test).
