Apple and almond cake

INGREDIENTS (18 cm mould)
- 3 apples
- 150 g almond flour
- 80 g of butter at room temperature (the original Sale & Pepe recipe called for 100 g)
- 120 g of sugar
- 2 eggs
- 1 teaspoon baking powder
- 30 g flaked almonds
- cinnamon powder
- a teaspoon of vanilla extract
- a pinch of salt
PROCEDURE
- Soak the almond flakes in cold water for 15 minutes.
- Beat the butter and sugar until creamy.
- Add one egg at a time alternating with the almond flour.
- Add vanilla, salt and yeast and mix.
- Line the pan with baking paper.
- Peel the apples and slice them thinly after removing the core.
- Pour a layer of mixture into the cake pan and place a layer of apples on top, sprinkle with cinnamon. Continue until the ingredients are finished.
- Dry the almond flakes and arrange them on the surface in concentric circles.
- Bake for about 50 minutes at 180° (do the toothpick test).
