Knead until the mixture becomes sandy (if you use a stand mixer, equip it with a leaf).
Add the vanilla, the whole egg and the yolk, the sugar and mix briefly.
Form a loaf and take three small parts to color. Add the food coloring to each one: for the lightest pink, a little fuchsia food coloring, for the intense pink, increase the food coloring and for the green, choose your favorite shade.
Knead each color to mix evenly and wrap each color in cling film. Also wrap the natural shortcrust pastry and place everything in the refrigerator (you can even leave it overnight).
Roll out the various colors and use cookie cutters to cut out your favorite subjects, place on a tray covered with film and let cool well in the refrigerator. This step helps to keep the shape better.
Roll out the shortcrust pastry and place the colored shortcrust pastry cutters on top according to your taste. Pass the rolling pin over the surface so that the shortcrust pastry absorbs the designs. Cut out the biscuits with your favorite mold, round, square or flower-shaped...
Cook them on a baking tray covered with baking paper at 180° for about 15/18 minutes (it depends on the thickness you gave them and the power of your oven, so watch them in sight after 12 minutes).
