500 g of Manitoba flour 0 (if you don't have it, use 0)
250 ml of whole milk
90 g of sugar
2 egg yolks
10 g of fresh brewer's yeast
ground nutmeg to taste
cinnamon powder to taste
a pinch of powdered ginger optional, in general you can use your favorite spice mix
blackcurrant or raspberry jam or something else... even spreadable hazelnut cream.

PROCEDURE
Warm the milk and dissolve the yeast in a small part.
I used the planetary mixer with the hook but you can do everything by hand.
In a large bowl add the milk and the milk with yeast, the flour, the sugar, the spices and the egg yolks and start kneading.
Knead until you obtain a smooth, soft dough.
Cover and let rise for 4 or 5 hours away from drafts or in the oven with the light on. I have the leavening function on the oven and 2 hours were enough.
Divide the dough into two parts.
Roll out the dough on a floured surface with a rolling pin, trying to give it a rectangular shape. Do the same for the second dough.
Spread the jam on the first dough without reaching the edges. Overlay the second dough and spread the jam again.
Roll it up, starting from the longest side, to form a roll.
Score them with the blade of a knife, push the blade in and divide them in half.
Turn them with the cut side facing upwards (the one with the jam).
Cross them over each other to create a weave.
Join the ends to form a donut and seal by pressing the dough.
Move it onto the baking tray covered with baking paper.
Cover again and let rise for about 45 minutes.
Brush the entire surface with beaten egg yolk and milk (or milk and egg white)
Bake at 180° for 25/30 minutes in a preheated oven. Adjust according to your oven: in mine 25 minutes at 180° or in any case until golden brown.
Prepare a sugar syrup by mixing water and granulated sugar and cooking for a few minutes.
Once the wreath is baked, brush it while still hot with the sugar syrup.
Optional...you can add chopped pistachios and fresh currants or something else.
Add a red ribbon and tie a bow where the dough joins.
