Cut the avocado skin into two halves. Remove the pit and scoop out the pulp with a spoon. Place the pulp in a bowl and mash it with the prongs of a fork.
Add the juice of half a lime (more if you like), salt and pepper to taste, then taste!
Spread the avocado pulp on a cutting board.
Add the thinly sliced spring onion and the tomato cubes.
Completed with some edible flowers. A drizzle of extra virgin olive oil and serve accompanied by nachos or bread slices.
You can prepare it and store it in the refrigerator covered with film (without nachos and bread). Do not prepare it too far in advance because it tends to darken
