(Prepared with a 22 cm mould)
- Separate the yolks from the whites.
- Beat the egg yolks with the sugar.
- Add the honey, then the coconut oil (or butter) and the milk.
- Add the sifted flour and yeast.
- Beat the egg whites until stiff and add them to the mixture with a spatula.
- Peel and slice the 4 apples. Add them to the mixture and mix.
- Pour the mixture into a cake pan lined with baking paper or greased and floured.
- Now slice the apples from the top using a mandolin or a knife trying to obtain slices of the same thickness.
- If you are quick, you don't need to wet them with lemon juice to prevent them from blackening (otherwise, do it!).
- Place the apple slices of different colors on the top of the cake (watch the video).
- Sprinkle with white granulated sugar.
- Bake at 180° for about 40 minutes (do the toothpick test because it depends a lot on your oven, it could take up to 50 minutes, check that the center of the cake is cooked; the toothpick must be dry. You can cover the top with tin foil to prevent it from darkening too much and continue cooking calmly).
- Remove from the oven and brush the top with apricot jam (heat it in the microwave for a minute to make it runny)
