Open flower lasagna with broad beans and pecorino cheese

INGREDIENTS (for fresh pasta)
200 g of 00 flour + 2 eggs
or
200 g of flour + water to taste
or
100 g of 00 flour and 100 g of semolina)
INGREDIENTS (to color the pasta) for the lilac color 2 teaspoons of red cabbage powder + 100 g of flour and water to taste.
for the blue color 2 teaspoons of natural blue food coloring + 100 g of flour and water as needed
INGREDIENTS (for the broad bean pesto) 450 g of frozen or fresh broad beans
vegetable broth to taste (optional)
extra virgin olive oil to taste
1 clove of garlic
50 g of parmesan cheese
salt
pepper
INGREDIENTS (for the filling) 3 tablespoons of the broad bean pesto you prepared (even half if you prefer it tastier)
80 g of pecorino cheese
250 g of ricotta
salt and pepper
PROCEDURE
Prepare the dough of the various colors following the generic recipe that you find on the blog.
Let the dough rest and in the meantime prepare the broad bean and pecorino pesto.
Blanch the broad beans in boiling salted water (you can do this the day before) and shell them.
Blend them with 50 g of parmesan, the clove of garlic, salt, pepper and extra virgin olive oil. Taste and adjust to your taste.
Take 2/3 tablespoons and mix with the ricotta, pecorino and salt/pepper to prepare the cream to spread between one layer and the next.
Always taste to adjust the flavor.
Roll out the fresh pasta with a rolling pin or pasta machine (I use it until it reaches the second-to-last thickness).

Cut the pasta into rectangles and cook them in salted water.
Drain them and place them on a clean tea towel.
Plate by distributing the broad bean pesto on the plate. Now alternate layers of fresh pasta with the pecorino and ricotta cream. The last layer must be the decorated fresh pasta. You can add some fresh broad beans, pink pepper and/or a drizzle of extra virgin olive oil.
Assembling an open lasagna requires speed, in catering it is done under heating lamps so as not to cool the food.
At home, if it is necessary to reheat, we can use the microwave covering with cling film.
