INGREDIENTS (for the loaf in the photo I doubled the photos)
200 g of Manitoba flour (or Kamut)
125 g of wholemeal flour (I used spelt because I didn't have any)
250 ml of buttermilk (very easy to prepare, I never find it... I prepare it with 125 g of low-fat yogurt and 125 ml of skimmed milk plus a few drops of lemon)
1 level teaspoon of baking soda
1 teaspoon salt
PROCEDURE
Prepare the buttermilk by mixing yogurt and milk. Add a few drops of lemon and let it sit for 10 minutes. The buttermilk is ready to use.
In a large bowl (or the one of the planetary mixer with the hook) mix the flours, add the salt and the bicarbonate. Start kneading pouring the buttermilk.
Work a little. Form a loaf with the dough and place it on the baking tray covered with baking paper. Cut a cross on the surface and bake at 200°, preheated oven, for about 35/40 minutes. Let it cool before slicing it.
