Panna cotta with strawberries inside

INGREDIENTS (for the panna cotta)
- 800 ml of cream
- 1 vanilla bean or 1 teaspoon vanilla extract
- 80 g icing sugar (or more if very sweet)
- 12 g of strawberry sheets (you can replace strawberries with agar agar)
- 4/5 whole strawberries, cleaned
INGREDIENTS (for the coulis)
1 basket of strawberries - 2 tablespoons sugar
- 2 tablespoons of water
- lemon juice optional
PROCEDURE
- Prepare the bottle by cutting the end. Thread the strawberries, after cleaning them, onto the stick (of course you can also prepare it in cups)
- To prepare the panna cotta: soak the gelatine in cold water.
- Heat the cream with the vanilla seeds extracted from the pod and the icing sugar and bring to just below boiling point.
- Squeeze the gelatine and dissolve it in the hot cream.
- Pour a very small amount of cream into the bottle.
- Insert the skewer with the strawberries and secure it by wrapping it around a strip of tin foil held in place with an elastic band.
- Add the panna cotta and wait until it thickens at room temperature before moving it in (better to leave it overnight). Remove the toothpick.
- Prepare the strawberry coulis by cooking until you obtain a puree that can be blended.
- Once cooled, place it in a baby bottle.
- Prepare the plates for serving following some suggestions in the video for plating.
- Cut the bottle and place the panna cotta on a cutting board ready to be sliced.
- Serve by spreading the coulis on the base of the plate and on top a slice of panna cotta with strawberry.
