Apple and yogurt cake

INGREDIENTS
- 150 g of white spelt flour (or 00 flour)
- 110 g butter (melted and cooled)
- 125 g of plain yogurt
- 100 g of whole coconut sugar (or granulated sugar)
- 3 eggs
- 4 large apples
- 1 organic lemon
- a sachet of yeast
- a pinch of salt
- coconut or cane sugar for the surface
PROCEDURE
- Beat the eggs with the sugar until the mixture becomes frothy (about 10 minutes).
- Add the sifted flour and yeast, the butter, the yogurt, the lemon zest and the pinch of salt.
- Squeeze the lemon. Slice the apples after peeling them and sprinkle them with the juice.
- Add 2/3 of the apples to the mixture.
- Butter and flour a mold and pour the mixture into it.
- Spread the apples on the surface and sprinkle with sugar.
- Cook at 180° for about 40/50 minutes (do the toothpick test)
