Apple and yogurt cake

INGREDIENTS

  • 150 g of white spelt flour (or 00 flour)
  • 110 g butter (melted and cooled)
  • 125 g of plain yogurt
  • 100 g of whole coconut sugar (or granulated sugar)
  • 3 eggs
  • 4 large apples
  • 1 organic lemon
  • a sachet of yeast
  • a pinch of salt
  • coconut or cane sugar for the surface

PROCEDURE

  • Beat the eggs with the sugar until the mixture becomes frothy (about 10 minutes).
  • Add the sifted flour and yeast, the butter, the yogurt, the lemon zest and the pinch of salt.
  • Squeeze the lemon. Slice the apples after peeling them and sprinkle them with the juice.
  • Add 2/3 of the apples to the mixture.
  • Butter and flour a mold and pour the mixture into it.
  • Spread the apples on the surface and sprinkle with sugar.
  • Cook at 180° for about 40/50 minutes (do the toothpick test)
