Torta piemontese alle pesche

INGREDIENTS

  • 1 kg of ripe peaches
  • 200 g of amaretti biscuits
  • 5 ladyfingers
  • 25 g of cocoa
  • 25 g of sugar
  • 1 egg
  • to decorate a peach slice or just some icing sugar

PROCEDURE

  • Blend the amaretti. Peel the peaches and cut them into pieces. Blend the pulp, add the cocoa, sugar, broken ladyfingers and the lightly beaten egg.
  • Also add the previously blended amaretti. Pour the mixture into a 20 cm mold lined with baking paper. You can decorate with slices of a peach. Bake in a preheated oven at 180 ° for 15 minutes, then lower to 150 ° and continue cooking for 50/60 minutes (in my oven 60 minutes, it could take longer .... do the toothpick test, taking into account that it is a moist cake). Remove from the oven and let cool at room temperature. Place in the refrigerator and always keep in the refrigerator (prepare it the night before). You can serve it with a scoop of cream ice cream.
