Broad bean pesto

INGREDIENTS

150 g of fresh and cleaned broad beans

75 g of pecorino cheese

70 ml of extra virgin olive oil

1 small clove of garlic

4 mint leaves

PROCEDURE

  • Clean the broad beans by shelling them and removing the peel and skin that covers them.
  • In the blender, put the cleaned broad beans, the peeled garlic, the grated pecorino, the mint leaves and an ice cube and start blending, pouring in the oil in a thin stream. If you don't use ice, don't overheat the blades, for example you can put them in the fridge an hour before using them and turn the blender on at regular intervals. You should obtain a creamy and homogeneous mixture.
  • Store it in a jar covered with oil and tightly closed or cover with cling film and place in the refrigerator. It can be frozen. Use it to season pasta (use a little cooking water to dilute it), gnocchi, rice or even simply bruschetta as once upon a time.
