Sweet fried pizzas

INGREDIENTS FOR THE DOUGH

  • 400 g of pizza dough, which you can prepare yourself with:
  • 250 g of 00 flour
  • 150 g of water approximately at room temperature
  • 2 g of dried yeast
  • 5 g of salt
  • 15 g of Zucchi extra virgin olive oil
  • Zucchi peanut oil

INGREDIENTS FOR MASCARPONE CREAM

  • 125g mascarpone
  • 110 g of fresh cream
  • 45 g of icing sugar

INGREDIENTS FOR RASPBERRY COULIS

  • a basket of raspberries (you can also use frozen ones)
  • granulated sugar
  • water to taste
  • 4 g of gelatine (to be soaked in cold water)
  • fresh mint leaves and sugar confetti (optional)

PROCEDURE

  • If you are also preparing the pizza dough, start by dissolving the yeast in 50 ml of water.
  • Dissolve the salt in the remaining water and add the oil.
  • Knead the flour adding the water with the yeast and then the remaining mixed with oil and salt. Continue kneading on a pastry board. Let the dough rest covered with a cloth for ten minutes.
  • Take the dough and form the folds (take the ends and bring them towards the centre).
  • Place it in a bowl covered with cling film and leave to rise for at least 2 hours (minimum!) in the oven with the light on or use the leavening function of your oven if you have one.
  • Prepare the mascarpone cream by whipping all the ingredients together. Place the cream in the refrigerator covered with cling film.
  • Prepare the raspberry coulis by cooking the raspberries, after washing them, with a spoonful of water and one of sugar until you obtain a puree.
  • Divide the pizza dough into many equal balls (you can weigh them and prepare them in the size you prefer) and roll them out with the help of a rolling pin.
  • Fry them in plenty of Zucchi Peanut Seed Oil.
  • Remove the fried ones with a shovel when they are just golden and place them on a tray covered with absorbent kitchen paper or fried paper. Sprinkle them with granulated sugar while they are still hot.
  • Blend and sieve the raspberry coulis. Squeeze the gelatine and add it to the puree. Wait until it starts to thicken slightly and distribute on the pizzas with a teaspoon or a kitchen bottle.
  • Fill the piping bag with the mascarpone cream and distribute it on the sweet pizzas.
  • Add a fresh mint leaf and some sugar confetti to complete the pizzas.
