Simple plumcake with chocolate chips

180 g of 00 flour
60 g of starch
16 g of yeast (one sachet)
150 g of sugar
3 eggs
100 g of rice oil or seed oil
1 lemon (grated zest)
1 vanilla bean (seeds) or 1 teaspoon extract
1 pinch of salt
80 g of chocolate chips
optional a piece of butter and icing sugar to taste
Beat the eggs with the vanilla using an electric whisk or a stand mixer with a whisk attachment for a few seconds. Add the sugar and beat for about ten minutes until the mixture is fluffy and light. Add the oil in a drizzle, the grated lemon zest. Finally, incorporate the sifted flour with the starch and yeast with a spatula using movements from the bottom to the top. Finally, add the salt and the lightly floured chocolate chips.
Optional: you can make an 'incision' and insert a strip of cold butter.
Cook at 180° for about 40/45 minutes (do the toothpick test to check if it is cooked).
Let cool on a rack and sprinkle with icing sugar.
