Walnut and egg white cake

INGREDIENTS (for the cake)

  • 200 g of 00 flour
  • 150 g of walnut flour (or walnut kernels)
  • 380 g egg whites (about 9)
  • 180 g of icing sugar
  • 220 g butter
  • 10 g of baking powder
  • 3 teaspoons of honey

INGREDIENTS (for decoration)

  • chopped walnuts
  • 100g of chocolate
  • 100 ml of fresh cream

PROCEDURE

  • If you don't have walnut flour, you can blend the kernels with 00 flour and icing sugar.
  • Melt the butter and let it cool.
  • Prepare the dough by mixing the sifted flour and yeast in a large bowl with the walnut flour, icing sugar, honey and egg whites.
  • Add the melted butter and mix with a spatula. Cover the bowl with cling film and place in the refrigerator for half an hour.
  • Butter and flour the mold or line it with baking paper. Pour the mixture into the mold and bake in a preheated oven at 180 ° for about 25/30 minutes (do the toothpick test).
  • Remove from the oven and let cool.
  • If you want you can add a chocolate ganache. I prepared it using 100 g of chocolate (I had pieces of dark, white and milk) broken up. I heated 100 ml of cream and a teaspoon of honey. I put the chocolate in a bowl and poured over the cream, stirring without incorporating air. As soon as it has cooled and thickened you can pour it on the cake and complete with chopped walnuts. Or use it to serve the cake slices by pouring it over the slice when you plate.
